Coconut Pancakes Recipe

Coconut pancakes with creme fraiche and summer fruits.

I made these often during my Blood Sugar Diet weeks – and sometimes even in between!  They are very easy to make, use staple store cupboard ingredients and are delicious and filling.

Two are usually enough!  You may be tempted to try more!  Complemented beautifully with fresh or defrosted frozen berries and a dollop of creme fraiche or Greek yogurt.
